After meeting up with the chef at Lanterns Restaurant, you’ll hop on a cyclo - a typical three-wheeled bicycle taxi - for a fascinating trip to a local produce market. Here you’ll get a colourful lesson in the ingredients that are key to the country’s culinary culture and how to choose and haggle for the best, pausing for a refreshing sugar-cane juice along the way. On returning to the restaurant, you’ll be taken through the necessary steps to create a three-course meal, starting with fresh spring rolls, perhaps, followed by lemongrass chicken or fish cooked in a clay pot depending on what’s on the menu that day. You’ll also discover the secret of cooking perfect rice and how to flambé fruit for an impressive dessert without setting anything else on fire. The well-deserved finale is, of course, sitting down to eat what you’ve made in the company of your fellow cooks.
