A former palace with rooftop medina views, a 14-metre pool, and a private art collection that spills into the corridors
Palais Faraj sits on the southern edge of Fes el-Bali. Unlike many medina stays, you can reach it by car, then explore the old city on foot. Its 32 Rooms and suites, terraced garden, and blue-zellige pool make it feel more expansive than a traditional riad, with the medina filling the view from the gardens and rooftop.
Minimalism? Not here. Painted cedar ceilings, carved plaster, richly coloured zellige, and marble fountains fill the salons and courtyards, while paintings, bronzes, antique carpets, jewellery, and early photographs of Fes line the corridors. Much of the detailing was restored by Moroccan master craftspeople.
Essencia Spa* deserves more than a passing visit. Its traditional hammam rituals move from steam and exfoliation with eucalyptus black soap to rhassoul wraps, argan oil, and neroli. Massages, facials, scrubs, and body wraps extend the menu. Afterwards, there’s mint tea beside the pool or dinner at L’Amandier, where the summer roof terrace looks across the medina. Fes can wait until after the hammam.
Why we love Palais Faraj Suites and Spa
-
The medina fills the view from the terraced gardens, L'Amandier, and the Golden Bar.
-
The corridors double as galleries for a private collection spanning early photographs of Fes, African sculpture, bronzes, pottery, jewellery, and antique carpets.
-
Palais Faraj sits just inside the southern walls of Fes el-Bali. Unlike many medina stays, you can arrive by car, then explore the old city on foot.
-
A 14-metre outdoor pool and 32 rooms/suites make this a roomier medina stay than a small riad, without losing the palace architecture.
Rooms
Palais Faraj has 32 rooms and suites across eight categories. Trendy Riad Rooms are the most compact, reached by stairs and with limited inward views. Junior Suites begin at around 40m² and add a sitting area. Deluxe Suites and those above them are markedly larger, and most add a separate lounge, a bath, and a walk-in shower. Views vary, so the right upgrade depends as much on outlook and access as square metres.
Facilities
Breakfast is a good introduction to Fes flavours, with traditional breads and pastries, local goat’s cheese, and small msemmen, the crisp, layered Moroccan pancakes, made to order. Later, L’Amandier moves between Fez-style recipes and Mediterranean dishes, with the summer terrace looking straight across the medina. The Golden Bar handles cocktails and tapas in the evening, while the Tea Room serves mint tea, fresh juice, and lighter meals beside the pool.
L'Amandier & Rooftop Garden
The main restaurant mixes Fez cooking with Mediterranean dishes. The Moroccan menu runs from harira soup and seven-vegetable couscous to tagines and dafina, a slow-cooked Moroccan Jewish dish with beef, chickpeas, wheat, and spices. The outdoor terrace opens in summer and is popular.
The Golden Bar
An evening cocktail bar with panoramic medina views, cocktails, wines, champagne, and tapas.
Tea Room, Grand Patio & Pool
Moroccan mint tea, fresh juice, wine by the glass, salads, and light meals served beside the pool, under the orange trees in the Grand Patio, or in the library lounges.

Essencia Spa is built around the Moroccan hammam rather than a generic treatment menu. A typical ritual starts with heat and a scrub using eucalyptus black soap, followed by a rhassoul clay wrap. For the full version, the Palace Ritual adds an argan-oil massage. There are massages*, facials*, and body treatments* too, but make time for the hammam. Private treatment rooms and a relaxation area give the spa more substance than you might expect from a 32-suite hotel. It’s particularly well timed after several hours on the medina’s hard stone lanes. If you’d rather raise your heart rate, there’s an air-conditioned fitness room with Technogym equipment and a rooftop yoga terrace.
Family Suites sleep up to four guests and feature two bedrooms: a king bedroom with en-suite bathroom and a single bedroom with its own shower room. There's also space for an additional bed in the separate living room. Baby cots are available on request (supplement applies), while extra beds are available in selected Family, Ambassador and Royal Suites, also subject to a supplement and availability.
