A hilltop hotel with contemporary Moroccan design, a panoramic infinity pool, and the medina below.
Hotel Sahrai takes a different angle on Fes. Quite literally. It sits on Dhar El Mehraz hill, around 10 minutes by car from Fes el-Bali, with the medina spread across the view rather than pressed against the front door. The payoff is space: 50 light-filled rooms, broad terraces, a full spa, and a panoramic infinity pool.
Designer Christophe Pillet keeps the architecture contemporary while giving Fes plenty of room in the details. Taza stone, carved plaster, local ceramics, copper lanterns, and tall arches sit alongside bespoke furniture, warm grey fabrics, ochre leather, and floor-to-ceiling glass. It’s unmistakably Moroccan, but not remotely riad-like.
The pool earns its headline billing, with the Medina in the distance and sun on the water through the day. Spa by Sahrai offers a range of treatments and hammam rituals (a Moroccan must-do), alongside a fitness room. Three restaurants and two bars cover your evening plans.

Hotel Sahrai’s 50 rooms and suites come in four categories. Floor-to-ceiling windows bring in plenty of light, while warm grey fabrics, ochre leather headboards, Taza stone, carved plaster, and marble keep the look streamlined rather than stark.
Bathrooms are open to the bedroom behind glass walls, with sheer curtains for privacy.

Breakfast is served buffet style, then three restaurants give dinner some range: Moroccan cooking at Amaraz, contemporary Italian dishes at Medusa, and Lebanese food on Jungle’s rooftop. Salon Lyautey and the white-marble Arcades cover cocktails, Moroccan wine, afternoon tea, and lighter meals.

Spa by Sahrai brings together Cinq Mondes treatments* and marocMaroc hammam rituals*. There’s also a zellige-tiled Jacuzzi*, sauna*, steam room* and a Technogym fitness room, although we’d make time for the hammam before the treadmill.
The hotel’s stunning panoramic infinity pool is a great spot for kids to burn off energy while you relax on the deck chairs.
