Sustainable features
Both Jade Mountain and adjoining Anse Chastenet are doing their bit for sustainability. The interior walls in Jade Mountain’s rooms are finished in a toned coral plaster sourced from quarries in Barbados. The concrete exterior is filled with locally quarried stone, while each window opening is framed with massive 3 x 18 inch tropical wood frames. Much of the produce comes fresh from the surrounding 600-acre estate, including aubergines, pumpkins, mangoes, cocoa and a variety of herbs. Chef Allen Susser frequently takes guests on tours around Emerald Farm, a 36-acre organic plot, while great emphasis is placed on seasonality and supporting local farmers.
