There’s nowhere quite like Cappadocia. This extraordinary pocket of central Turkey is contoured into an otherworldly terrain of stark Anatolian plains and soaring boulders. A scattering of jaw-dropping cave towns are carved into, and beneath, the rippling hills. Clinging to the highest peak is the tiny town of Uçhisar, home to boutique gem argos in Cappadocia. This huddle of caves and old stone houses – set around a 3.5-mile-long labyrinth of subterranean tunnels – hasn’t always been a hotel, and was once a monastery, lodgings for Silk Road travellers and a linseed oil factory. A hefty 23-year restoration project has transformed the half-dozen stone buildings and cave dwellings into 51 stylish rooms and suites, all surrounded by pretty gardens and outdoor terraces. From the bare-stone walls and earthy tones of Stone Rooms, to Deluxe Rooms with rock-hewn bathrooms and fireplaces (or chimineas), no two rooms or suites at argos in Cappadocia are the same. The cream of the crop is the Splendid Suite, with a private terrace overlooking Pigeon Valley and Mount Erciyes, or even its very own private plunge pool set in a cave – the best spot for an early-morning dip. The dining here is as extraordinary as the setting. Imagine waking to leisurely breakfasts of warm-from-the-oven breads, flaky pastries and cooked-to-order omelettes, all while watching brightly coloured hot air balloons float above Cappadocia – nab a window seat for the best views. Later in the day, take to the outdoor stone terrace for an al fresco dinner of Turkish delicacies, washed down with vintages from the hotel’s own vineyard – and served with views of the snow-topped Mount Erciyes.
The ultra-slick Conrad Istanbul Bosphorus is for guests looking for the finer things in life. A luxurious retreat with a glossy finish – marble pillars, purple velvet armchairs, gilt-framed paintings – this elegant hotel is in the Beşiktaş cultural quarter. Wake to Mediterranean breakfasts overlooking the Bosphorus at brand-new Manzara Restaurant, where a glass-edged wall whets your appetite for exploring the city beyond. Spend your days marvelling at the jaw-dropping Byzantine architecture of Hagia Sophia (pick up a three-day Muzekart from the concierge to skip the queues), browsing the art galleries housed in the dusky-pink Akaretler Row Houses and eyeing the installations by up-and-coming artists at Art ON Istanbul. After you’ve had your fill of the city’s charms, return to the hotel’s sleek spa to turn up the heat on weary limbs in the Turkish bath, saunas and steamrooms. For an extra slice of indulgence sign up for a Spa Soul treatment – try the traditional Turkish hammam for a skin-softening exfoliation and cleansing soap massage. Once you’ve worked up an appetite, watch the culinary theatre at Manzara’s open kitchen, where chefs knock together the likes of green gazpacho or prawns with fresh burrata, followed by yoghurt- and lime-marinated chicken shish, and vine-leaf risotto with grilled anchovies. Finish the day with a mint julep cocktail – spiked with herb-infused bourbon whisky – on the 14th-floor Summit Bar and Terrace, a breezy spot with turquoise leather stools and candlelit tables. Grab a table by the edge of the terrace for the best views of the Istanbul skyline. Rooms and suites are cosy cocoons from the city: Deluxe Rooms come with street views and marble bathrooms, or go all out with an Executive Room with Bosphorus or park views to access the exclusive executive lounge.
Turkey’s cultural capital is a fascinating mix of Roman, Byzantine and Ottoman influences. Here, right at the heart of charming Old Istanbul is the DoubleTree by Hilton Sirkeci, Istanbul a luxurious bolthole set among the historic sites of Sultanahmet. On your doorstep are all the big-hitters; wander the surrounding lattice of narrow streets to stumble across the minaret-studded Blue Mosque, Hagia Sophia and its magnificent mosaics, the sixth-century Basilica Cistern and Topkapi Palace’s warren of elaborately tiled rooms arranged around a beautiful Turkish bath. A clutch of Ottoman bathhouses and excellent museums (plump for the three-in-one Istanbul Archaeology Museums if you’re short on time) sits alongside the city’s kahvehans (coffeehouses) and meyhanes (Turkish taverns). However, be sure to save room to sample the hotel’s culinary offerings: three restaurants span everything from traditional breakfasts and all-day light bites through to a more refined à la carte dinner menu. The standout is the rooftop Bosphorus Terrace Restaurant, where diners linger over shared platters of classic Turkish meze, served with captivating views of the Istanbul skyline. The more laid-back Prince Café & Bar rustles up more casual plates like pan-fried Izmir cheese and oven-fresh flatbreads filled with feta and zucchini, washed down with local beers and wines. Rooms are elegant and stylish in earthy colour palettes, accented with bursts of turquoise woven into velvet armchairs and splashed across wall art. Standard Guest Rooms come with luxury finishes like 300 thread-count bed sheets and a Sweet Dreams Sleep Experience, while Junior Suites feature separate bedroom and living areas and Deluxe Suites bump up the space, making room for a dining table.
A stunning façade, with arched windows that glitter at night, hints at the beauty within. Interiors do not disappoint: acres of gleaming marble, silk Tabriz carpets beneath hand-painted ceilings, furniture adorned with mother of pearl, original artwork jostling for attention with elaborate tiles. Despite its grand designs, Ajwa Hotel Sultanahmet has the intimacy unique to a boutique bolthole. There’s a spa with a Turkish hammam, indoor pool, treatment rooms, steamroom, sauna and snow fountain. A wooden-panelled patisserie on the mezzanine serves up delicious baked treats (ask for the home-made baklava), washed down with aromatic teas. Sumptuous rooms and suites are rooted in a sense of place, with Seljuk motif-inscribed headboards, velvet camel-hair sofas and elaborately tiled bathrooms. You’re in an excellent location: the Old City is a cultural jigsaw whose layers of history can be pieced together through its Byzantine and Ottoman architecture. A 10-minute walk takes you to all the iconic landmarks, from the dazzling Blue Mosque and mosaic-adorned Hagia Sophia, to the cavernous Basilica Cistern and Topkapı Palace with its mysterious harems. After a day soaking up Istanbul’s charms, return to the rooftop restaurant to see the city from a different perspective – from up high on the top floor.
