This Relais & Châteaux hotel was built around the Gurgitello Spring in the late 19th Century to make the most of the therapeutic properties of the thermal waters. And today, you too can luxuriate in the healing waters and volcanic mud at the hotel’s incredible Privilege Spa. The hotel’s warm staff, excellent facilities and classic style – picture mosaiced columns, beautiful orchids and elegant statues – make it easy to spend days lounging in the peaceful grounds but there’s a free shuttle into town and to the beach if you can drag yourself away. The hotel is home to one of the best restaurants on the island so be sure to reserve a table well in advance for dinner at the Michelin-starred Il Mosaico. There are just eight tables at this intimate gourmet restaurant which offers à la carte and tasting menus of beautifully presented classic regional dishes with a modern twist. Reserve one of the chef’s tables in the kitchen for the chance to see the chefs create their culinary masterpieces. Sit under shady olive trees on the pretty terrace at Gli Ulivi which offers a tempting breakfast buffet with freshly-made pastries. You can also enjoy fresh seafood, delicious pizzas and home-made pastas – with gluten-free options – washed down with craft beers and fine wines, and accompanied by live music. During the day, enjoy snacks and drinks at the Bouganville Snack Bar on the poolside terrace of the Roof Garden.
