When it comes to cuisine, the hotel prides itself on its 'farm to plate' approach. It has its own cheese factory, dairy farm and vegetable garden. Tuck into delicious home-cooked local dishes, featuring everything from organic vegetables, freshly caught rainbow trout, jams, honey and dairy products straight from the farm. You can eat inside in the dining room, or outside in the fresh Andean air — whether it's by a crackling bonfire or under the blue sky.
There are three types of outdoor lunches — the picnic area on the edge of a stream between mountains and the pre-Inca Caranqui mounds, just two kilometres from the hotel; half or full-day horse rides through the Andean countryside with a hot lunch; and lunch in the organic garden at the back of the hacienda (you can also take cooking classes here).
