Tanzania cuisine
The cooking of continental Tanzania is typically African. Basic dishes consist of stews accompanied by rice, beans, ugali (a thick porridge of maize flour) or ndizi, plantains.
The lodges generally offer a copious buffet for breakfast, lunch and dinner. In the morning, there's a choice of cereals, fried eggs, fruit juice, fresh fruit, toast, and so on. At lunch time, there will be a selection of salads and raw vegetables, then fish or meat. The large towns have several ethnic restaurants, mainly Chinese and Indian. Some of the latter serve only vegetarian dishes.
The increasingly popular Kenyan dish known as nyama chome has spread over the border to Tanzania: it consists of chunks of goat or other meat, or sometimes poultry, grilled and served on a skewer.
